Preheat the oven to 180°C and grease one loaf pan with non-stick spray.

Add the oil, eggs, granulated xylitol and milk to a mixing bowl and whisk until smooth. Add the creamed sweetcorn and mix until combined.

Sift together the flour and baking powder and add to the egg mixture. Whisk until just combined.

Fold in the corn kernels, cheddar cheese and feta cheese. Transfer batter to prepared loaf pan.

Bake for 45 minutes until golden brown on top. Remove from the oven and allow the bread to cool in the pan for 10 minutes before gently removing it from the pan to cool completely on a wire rack.
