Method

Saute onions in olive oil in a large pot until translucent.

Add the bacon and cook until brown and crispy.

Add the stock, water, split peas, and potato. Place a lid on the pot and once it reaches boiling point, turn the heat down and simmer for 45 minutes. If the mixture is too thick, add more water.

Once the peas are cooked through and the potatoes are soft, add the cream and simmer for another 5 minutes. Remove from the heat and blend with a hand blender until smooth and creamy.

Taste and season with sea salt and black pepper.
