Shakshuka! Have you ever had it? Shakshuka has more than a few things going for it. It’s fun to say, fun to make, and fun to eat. The word Shakshuka comes from Arabic, meaning, “a haphazard mixture” or “all mixed up”. Shakshuka is a North African and Middle Eastern meal and features poached eggs in a simmering, hearty, spiced tomato and pepper sauce. I usually top mine with grated parmesan or dukkah and fresh herbs. The pepperoni salami in this recipe is optional, it adds a little deeper flavor to the sauce.
It’s easy, healthy, and takes less than 25 minutes to make.

Method

Heat olive oil in a large saute pan on medium heat. Add the chopped bell pepper and onion and cook for 5 minutes until the onion becomes translucent.

Add garlic and spices and cook for 1 more minute.

Add the tomatoes and juice and bring to a simmer. Break down the tomatoes using a large spoon.

Add the salami slices and mix the sauce well. Season with salt and pepper.

Use a large spoon to make small wells in the sauce and crack the eggs into each well.

Cover the pan and cook for 5-8 minutes, or until the eggs are done to your liking.

Serve with your favorite health toast or ciabatta and fresh avocado for extra healthy fats.
