Method

Season the salmon fillets with salt and pepper.

Heat the oil in a medium non-stick pan over medium heat. Cook the salmon fillets flesh-side down first, for 5 minutes on each side, or until cooked to your liking. Remove them from the pan and set aside.

To the same pan, add the butter, garlic and the roasted peppers, and cook for 3 more minutes. Add the spinach and allow it to wilt.

Reduce the heat and add the cream, chili flakes, parsley, salt, pepper and the juice of one fresh lemon. Bring to a light simmer. Taste the sauce and season with extra salt and pepper if needed.

Return the salmon to the pan and spoon the sauce over each fillet. Top with lemon slices if desired.

Serve with bulgar wheat, quinoa or rice. Recipe serves two.
