Method

Preheat the oven to 180°C and line a baking tray with parchment paper.

Place the buckwheat, oat flakes, coconut flakes, nuts, seeds and salt in a bowl and mix well.

Melt together the coconut oil, cacao powder, and maple syrup. Remove from the heat once melted.

Pour melted coconut oil mixture over dry ingredients and stir, make sure it is well mixed.

Transfer the granola mixture to the baking tray and spread into a thin even layer.

Bake for 20 minutes, stirring halfway through to make sure it bakes evenly. Remove from the oven and leave to cool completely.

Once the granola has cooled, use your hands to break it up into your desired size of chunks. Mix cacao nibs and puffed quinoa into granola clusters. Store in an airtight container.

Serve with yoghurt and fresh berries or for a delicious hearty winter bowl serve with warm almond milk.
