Method

In a mixing bowl, mix together the pumpkin puree, egg, milk, flour, baking powder and salt.

Heat oil in a pot until hot (not smoking hot). Drop spoonfuls of batter into the oil. Fry until golden brown on both sides (2–3 minutes per side).

Remove fritters with a slotted spoon and drain on paper towels.

Custard sauce: In a small pot, heat the butter, sugar (or Xylitol), water, milk and custard powder while continuously stirring. Stir until thickened.

Serve warm pumpkin fritters with custard sauce.
