Pea Puree, Feta & Mint Snack

This is one of my all-time favorites, especially in summer. It’s refreshing, light, and full of flavor. You can always add other flavors and spices if you desire.

Method

In a food processor, process all ingredients until smooth. Taste and season with salt and pepper.

Enjoy as a dip or snack on a seed or wholewheat cracker, rye bread, or corn crisp.
