Oat & Almond Cookies

Method

Preheat the oven to 180°C.

Sift together the flour, corn flour, salt, bicarb of soda, and baking powder. Add the oats, coconut, and almonds and mix well. Set aside.

Whisk the butter and almond butter together. Add the eggs, sugars, and vanilla essence. Whisk until well incorporated.

Add the dry ingredients to the egg mixture and mix well.

Scoop out balls of dough with your ice cream scooper and place on a prepared baking sheet. You can sprinkle sesame seeds on the top if preferred.

Bake for 15 to 20 minutes or until golden brown.

Let cool and enjoy with your favorite cup of tea.
