This is mushroom soup as it should be – rich, indulgent, and full of earthy flavor.

Method

Heat the butter in a saucepan, then gently sizzle the onion, garlic and thyme for 5 mins until softened. Add mushrooms and cook for about 10 minutes covered on low heat until softened. Stirring often.

Add the stock to the mushrooms and bring to the boil. Lower heat and simmer for 20 minutes. Stir in cream or crème fraîche, then simmer for a few more minutes. Blitz the soup with a hand blender or liquidizer, pass through a fine sieve. Taste and season with salt and pepper.

To serve: Ladle the soup into bowls, scatter over the croûtons and chives and drizzle with truffle oil.
