Method

Preheat the oven to 175°C and coat a medium size pie or baking dish with non-stick spray. Set aside.

Heat the butter in a pan. Sauté the mushrooms, onion, and kale for 10 minutes until the kale is wilted. Remove from the heat and set aside to cool slightly.

In a large mixing bowl, whisk together the eggs, milk, cream, cheddar cheese, half of the feta cheese, salt and black pepper. Add the kale mixture and whisk until combined.

Transfer the mixture to the prepared pie dish. Top with the leftover feta cheese.

Bake for 45 minutes until the top is golden brown. Cool slightly and cut into six slices.
