On this rainy morning, I’m craving one of my ultimate comfort foods: milk tart filling. But instead of sticking to my usual recipe, I’ve decided to give it a healthy twist by transforming it into a breakfast porridge. So, without further ado, here’s my recipe for a nutritious honey milk tart porridge – dig in and enjoy!

Bring 750 ml milk to a boil in a medium-size pot.

In the meantime, whisk together in a mixing bowl the leftover 250 ml milk, eggs, salt, corn flour, almond flour, oat flour, Xylitol, and honey. Whisk until smooth.

Once the milk is boiling, immediately pour in the egg mixture and keep whisking on medium heat until the mixture starts to thicken up. Reduce the heat and keep whisking slowly. Cover the pot with a lid and simmer for 5 minutes.

Stir in the vanilla and remove from heat.

Serve warm with fresh fruit, cinnamon, and extra honey.
