Introducing my delicious and nutritious Red Velvet Cookies! These high-protein treats are made with wholesome einkorn flour and naturally sweetened with xylitol, making them a healthier option for the whole family. They’re easy to whip up, irresistibly yummy, and perfect as a show-stopping snack or dessert. Enjoy a guilt-free indulgence that everyone will love!

Method

Add your butter and sugars to a mixing bowl and whisk until creamy.

Add in your egg, vanilla and red food coloring and whisk again.

Add in the flour, cacao powder, baking powder, baking soda, and salt and whisk until a cookie dough is formed!

Add in your white chocolate chips and beat until well combined. Do not overmix.

Weigh your cookies out into twelve cookie dough balls – they’re about 120 to 130 gram each!

Once they’re rolled into balls, put your cookie dough in the freezer for at least 30 minutes, or in the fridge for an hour.

Take your cookies out of the freezer and put them onto a lined baking tray. I put six cookies per tray.

Bake the cookies for 12 to 15 minutes in the preheated oven.

Once baked, leave them to cool on the tray for at least 20 minutes. They will look a little raw when they come out – but trust me they are not.

In the meantime make your drizzle: whisk the cottage cheese, yoghurt and syrup together until smooth and enjoy with your cookies. This is optional.
