High Protein Blueberry Bake

Here’s my high-protein, healthy blueberry bake! It’s refined sugar-free, delicious, nutritious, and super easy to make—perfect for busy parents who want to feed their toddlers something wholesome and tasty.

Method

Preheat oven to 180°C and spray a 20 x 20 cm baking dish with cooking spray. Set aside.

In a large bowl, add eggs, milk, Xylitol, baking powder, baking soda, and vanilla extract. Whisk until smooth. Add almond flour and 3/4 cup of the Einkorn flour. Mix well with spatula.

In a separate large bowl, add blueberries and rinse well. Sprinkle with remaining 1/4 cup Einkorn flour. Stir to coat blueberries in flour. It prevents berries from sinking to the bottom.

Add blueberries to batter and gently stir through. Transfer to prepared dish. Bake for 20 to 25 minutes until golden.

Remove from the oven and let cool for 10 minutes at least.
