Ingredients

‎ Shortbread layer

Caramel layer

Dark chocolate layer

Method

Preheat the oven to 180C. Cover a 20 cm x 20 cm square baking dish with parchment paper and set aside.

Shortbread layer: In a mixing bowl, mix together all the ingredients until well combined. Transfer the dough to your baking dish and spread the dough out until the top is smooth.

Bake in the oven for 15 minutes. Remove from the oven and let cool for 10 to 15 minutes while you make your caramel layer.

Caramel layer: Blend the cashew butter, peanut butter, medjool dates, maple syrup, and almond milk in a blender until smooth and creamy.

Spread the caramel evenly over the shortbread layer and store it in the refrigerator while preparing the chocolate layer.

Chocolate layer: Melt the chocolate and coconut oil in a saucepan or in the microwave until smooth and melted, stirring often to prevent burning.

Pour the melted chocolate on top of the caramel layer and store in the freezer for 10 minutes until chocolate layer is set.

Remove from the freezer and use the parchment paper to remove shortbread from the dish. Slice with a sharp knife into squares.

Store in the refrigerator for 4 to 5 days.
