Method

Preheat the oven to 180ºC.

Sauté the onion, garlic, and fresh baby spinach until soft.

Grease a 9-inch pie or quiche dish with non-stick spray.

Place the sauteed spinach onion mixture on the bottom of the pie dish, followed by the crumbled feta cheese.

In a medium bowl, whisk together the eggs, milk, cream, and Parmesan cheese. Season with salt and pepper. Pour the egg mixture over the spinach and feta in the dish and top with the cheddar. Top with a few additional baby spinach leaves.

Bake quiche for 45 to 50 minutes until the top is golden brown. Serve hot or cold.
