Easy Green Vegan Aioli

Method

Salad: In a large cast-iron heat the oil over medium heat. Add broccoli, cook, and stir until crisp-tender.

Add couscous and garlic, cook and stir 2 minutes longer. Stir in the broth and bring to a boil. Remove from heat and let stand, covered until broth is absorbed 5-10 minutes. Add the fresh olive oil, lemon juice, and fluff with a fork. Season with salt and pepper.

Green Vegan Aioli: With a hand blender, blend the mayonnaise, herbs, and garlic until smooth. Season to your taste.

Serve the couscous and broccoli salad with the green aioli and sprinkle with almonds, feta and Dukkah if preferred.
