Method

Preheat your oven to 200°C.

Remove the leaves and trim the stem of the cauliflower, keeping the core intact.

Slice the cauliflower into 2 cm thick “steaks” from the center of the cauliflower, discarding any small florets that may fall off. You can use the florets that fall off for another dish or a cauliflower soup. From my experience I get about 3 “steaks” out of one cauliflower head.

Place the cauliflower steaks on a baking sheet lined with parchment paper.

Drizzle a good amount of olive oil over the cauliflower steaks and season with salt, and freshly ground black pepper. You can drizzle one tablespoon of water extra on each steak to help with the cooking process and to use less olive.

Roast in the preheated oven for 30 to 35 minutes, flipping halfway through (optional), until the cauliflower is tender and golden brown.

Serve hot and enjoy as a main dish or a flavorful side with an avocado cream, hummus or cheese sauce. As it is a basic cauli “steak” you can really enjoy any flavorful sauce or dip of your choice. The options are endless.
