Method

In a large bowl, add the milk and sprinkle over the instant yeast. Whisk in the egg, sugar and only 3 tablespoons melted butter and the salt. Add the flour and stir with a wooden spoon. Add 1 extra tablespoon of flour at a time (if needed) until the dough no longer sticks to the sides of the bowl.

Turn out the dough onto a floured surface and knead for 2 to 3 minutes until the dough forms a smooth ball. Lightly grease the mixing bowl with oil and return the dough to the bowl. Cover with plastic wrap and let the dough rise in a warm place for about 40 to 45 minutes until doubled in size.

Turn the dough out onto the floured surface and sprinkle it lightly with flour. Roll the dough into a 40 cm x 20 cm rectangle.

Spread the dough with the 6 tablespoons of softened butter.

In a small bowl, stir together the brown sugar and cinnamon. Sprinkle it over the softened butter and gently press it into the butter.

Starting with the long end, roll up the dough, keeping it tight and even as you work. Cut into 12 equal pieces.

Grease a 20 cm x 24 cm baking pan with butter or spray with non-stick spray.

Arrange the rolls so that they are evenly spaced and cut side down. Cover the pan with plastic wrap and let the rolls rise in a warm place for 30 minutes until visibly puffed.

In the meantime, preheat the oven to 180°C.

Brush the rolls with the remaining 2 tablespoons of melted butter. Bake for 20 to 25 minutes until the edges are lightly golden brown. Remove from the oven and let cool in the pan for 15 minutes until you frost them.

For the cream cheese frosting

Whisk together the butter, cream cheese, vanilla and powdered sugar until smooth and creamy.

Generously frost the warm cinnamon rolls and serve immediately. Top with chopped pecan nuts if desired.
