Preheat the oven to 180°C and spray 2 round cake pans (or one large baking dish if you want one rectangular cake) with non-stick spray.

In a mixing bowl, whisk together the eggs, butter, oil, sugar, and vanilla essence.

Sift together the corn flour, cocoa powder, baking powder, and salt. Add to the egg mixture along with the quinoa, almond milk, and pistachio nuts and mix until well combined.
