Method

Cut a slit in the top of each date and gently remove the pit. Discard pits.

Fill each date with one brazil nut and lightly close the date.

Melt the dark chocolate in the microwave (do not overheat as it can burn easily) or on the stove top. Dip each date in the melted chocolate until covered and then dip into the ground pistachios.

Transfer the dates to a sheet pan covered with parchment paper. Place the dates in the fridge to allow the chocolate to set, about 30 minutes, or let harden at room temperature.
