Method

Preheat the oven to 180°C.

Heat the stock in a medium saucepan, add the quinoa and cook for about 20 to 25 minutes.

In the meantime, heat the olive oil in a small saucepan, add the kale and garlic saute for 5 minutes.

Blend the sauteed kale mixture, tahini, and 1/4 cup of the mozzarella with a hand blender until broken up into small pieces.

Once the quinoa is cooked, remove it from the heat to cool. Add the kale mixture, parmesan, and rest of the mozzarella. Mix well and season with salt and pepper.

Roll into small round balls and coat them in the almond flour. Place the balls onto a parchment-lined baking tray.

Bake for 20 – 25 minutes until crispy on the outside and soft cheesy on the inside.

Optional: Serve warm with avocado and beet hummus as a snack or side dish or serve cold with a salad.
