This is one of my favorite soups to make when I do not have a lot of time. It’s very basic but it’s delicious and nutritious.

Method

In a large pot, add the sliced carrots, stock, and 1 tbs olive oil and season with a pinch of salt, and cover with the lid. Bring to a boil then reduce the heat to low. Simmer covered until the carrots are tender for about 20 to 30 minutes.

When ready, puree the carrots together with the other 5 tbsp olive oil and chickpeas in a blender. Add more liquid if necessary. Taste and add more seasoning, if you feel it is needed.

Enjoy warm with your favorite freshly baked bread.
