Method

Preheat oven to 180°C and spray 6 small souffle ramekins with non-stick spray.

Whisk together the carrots, eggs, cottage cheese, yoghurt, milk, tahini and maple syrup.

Add the cinnamon, oat flakes, flour, sea salt, and baking powder. Mix until just combined.

Transfer batter to the ramekins. Top with pecans, walnuts or seeds if desired.

Bake in preheated oven for 20 to 22 minutes.

Serve with Greek yoghurt and maple syrup.

Can serve 2 ramekins per person for breakfast.
