Carrot Cake Banana Bread

Method

Preheat the oven to 180°C. Spray a loan tin with non-stick spray.

Whisk the eggs, bananas, oil, sugar, buttermilk, and vanilla essence together in a large mixing bowl.

Sift the flour, salt, cinnamon, baking powder, and bicarbonate of soda together and add to the egg mixture. Whisk together until well incorporated.

Lastly, fold in the carrots and walnuts.

Pour batter into the prepared loaf tin.

Bake for 50 to 60 minutes until your cake tester comes out clean.

Cool in tins for 10 minutes, then remove from tins and cool completely on rack.

Cream cheese drizzle: whisk together the cream cheese and maple syrup until smooth.

Drizzle over banana bread and top with extra walnuts if desired.
