A vibrant summer salad bursting with refreshing flavors and packed with nutrients. Quinoa, a gluten-free grain, is a protein powerhouse, rich in fiber, magnesium, and various vitamins and antioxidants. Broccoli, a superfood, adds crunch and is high in fiber, supporting digestion and weight loss.

Method

In a large bowl combine all the salad ingredients. Keep half the feta and nuts aside for later on top of the finished salad.

Combine olive oil, lemon juice, Dijon mustard, honey/maple syrup, and garlic in a small bowl or cup and stir to combine. The dressing will be thick. Season with salt and pepper to taste.

Pour dressing on top of the salad and mix well. Taste and season again with salt and pepper if needed.

Serve warm, at room temperature or cold. Delicious all three ways.
