Method

In a food processor, process half the lentils, beans, and walnuts until they appear slightly mashed. Transfer to a medium-sized mixing bowl along with the remaining lentils. Then add the rest of the ingredients: quinoa, carrot, onion, flour, breadcrumbs, flax eggs, tomato paste, Worchestershire sauce, herbs, salt, and pepper. Stir everything together until well mixed. If the mixture is too wet, add more flour.

Form 8 individual patties with your hands, making sure to keep them somewhat flat with round edges.

If you have time, refrigerating the mixture for about 30 minutes also helps dry out some of the moisture.

Refrigerate them until you are ready to cook them or cook them right away.

Start by warming the olive oil over medium heat in a skillet. Once heated, cook the burger patties on each side for about 5 minutes. Tip: Push the edges of the burger to the side of the pan to make sure they cook on the sides as well.

Serve on a warm bun with your desired toppings.
