Method

Beat the butter and sugar until light and fluffy. Add the egg and beat until just incorporated.

Add the dry ingredients and beat until incorporated. Do not over mix.

Fold in the ruby chocolate chips and walnuts.

Make cookie dough balls. I weight mine to about 100 grams each. Rest in the fridge for 2-3 hours.

When ready to bake. Preheat the oven to 180°C.

Bake in preheated oven for 15 minutes. Remove from the oven and rest for 10 minutes. Enjoy and store and an airtight container.
