‎ Cauliflower steaks

Basil pesto hummus

Method

Cauliflower steaks: Preheat the oven to 180°C.

Thoroughly wash and dry a whole head of cauliflower. Use a sharp knife to cut off the stem.

Place the cauliflower, stem side down, on a cutting board. Cut the cauliflower into 4 “steaks”. Each about 2 cm thick.

Place the cauliflower steaks on a parchment-lined baking sheet.

Drizzle the cauliflower steaks with a good amount of olive oil. Season with salt, black pepper and paprika (or sumac).

Roast for 15 to 20 minutes, then flip them and drizzle with olive oil and season again on the other side. Roast for another 20 minutes until golden brown and tender. Remove from the oven.

Basil pesto hummus: Add all the ingredients to a food processor and process until smooth and creamy.

Serve the cauliflower steaks with pesto hummus and top with pine nuts.
