Method

Preheat oven to 180°C. Prepare 2 round cake pans by spraying with non-stick baking spray.

In a large mixing bowl, add the flour, Xylitol (or sugar), cacao powder, baking powder, baking soda, and salt. Whisk through to combine.

Add the milk, oil, eggs, and vanilla to the flour mixture and mix together on medium speed until well combined.

Reduce speed and carefully add the hot water to the cake batter until well combined.

Distribute cake batter evenly between the two prepared cake pans. Bake for 30 to 35 minutes until ready.

Remove from the oven and allow to cool for about 10 minutes, then remove from the round pans and allow to cool completely and frost with your desired healthy low sugar frosting or drizzle with melted dark chocolate.
