Method

Melt the butter in a double boiler or in a bowl above a pot of hot water.

Mix the egg and lemon juice.

Slowly add the egg mixture to the eggs while whisking.

Add salt and pepper to taste.

You can always add more lemon juice if it is not sour enough

TIP: If it starts to separate just add a bit of boiling water.
