Creamy Broccoli Spinach Soup

This creamy broccoli spinach soup is made using only 7 ingredients and comes together in under 15 minutes! It is super nutritious, creamy, and absolutely delicious! You can easily make this soup vegan by swapping the parmesan cheese with more extra virgin olive oil, vegan butter or vegan cheese. In a large pot, add the broccoli florets, half the stock, and the garlic. Heat up until a light simmer. Cook for about 10 minutes, stirring often. Add the spinach together with the rest of the stock, cover, and bring to a boil, then simmer for 5 to 10 more minutes.

Add soup mixture to a blender together with olive oil, parmesan, and sea salt. Puree for 3-4 minutes until smooth and creamy. Taste and season with extra salt and pepper.

Serve warm with freshly toasted sourdough or seed bread.
