Method

Combine sugar, olive oil, eggs and vanilla in a large mixing bowl and whisk until combined. 

Add flour, almond flour, baking soda and salt and mix until flour is fully incorporated. Fold in the chocolate chunks.

Refrigerate dough for at least one hour or overnight. 

Preheat oven to 180°C and spray a baking tray with non-stick spray or line with parchment paper.

Scoop out balls using an ice cream scooper and add to baking tray.

Bake in preheated oven for 13 to 15 minutes until edges are golden and crispy and center is still soft.
