Cheesy Chicken Fritters

One weekend, my husband decided to get creative in the kitchen, searching for something new and delicious—and that’s how these Cheesy Chicken Fritters were born! Packed with flavor and so easy to make, they quickly became a family favorite, and now we’re completely hooked.

Method

In a large bowl, add the chicken, mozzarella, egg, mayo, flour, dill, salt and black pepper and stir thoroughly to combine. Refrigerate for at least 1 hour or overnight. Otherwise, process with cooking the fritters. 

In a large nonstick pan over medium heat, heat the oil. Working in batches, scoop 1 heaping tablespoon of chicken mixture of each fritter. Slightly flatten out the top of each fritter. Fry for 3 to 4 minutes until the bottom turns golden brown. Flip and cook the other side until golden brown and the chicken is fully cooked through. 

Transfer the fritters to a paper towel-lined plate. Repeat with the remaining chicken mixture, adding more oil as needed. 

Serve the fritters with garlic aioli or store in an airtight container for up to 2 days.
