Broccoli & Chicken Bake

Preheat the oven to 180 °C. Spray a medium size oven dish with non-stick spray, set aside.

Sauté onion in olive oil until soft. Then add the chicken and cook until golden brown.

Add the chicken stock and broccoli and simmer for 5 minutes then remove from the heat.

In the meantime, whisk together the cream, eggs, corn flour, cheese, spring onion and herbs in a mixing bowl. Add the chicken together with 1 tsp salt to the egg mixture and stir until combined. Season with extra sea salt and black pepper if needed.

Pour mixture into prepared oven dish and bake for 35 minutes until golden brown. You can always use a muffin pan.
