Method

Combine all the pancake ingredients in a blender and blend until smooth. Leave the batter to rest for 10 minutes.

Heat a non-stick pan with some coconut oil (or spray with a non-stick spray) and when hot add large tablespoons of batter per pancake.

Cook over medium heat for about 2 minutes on each side until golden brown.

Repeat to use up all the batter and serve with your favorite toppings.
