Method

Heat the dates, coconut oil, peanut butter, and maple syrup in a medium-size saucepan over low heat. Mix until well combined and the dates are soft. As soon as a smooth paste forms, remove from the heat.

Add the oat flakes, puffed quinoa and puffed rice to the date mixture and mix well. Using your hands, form the date mixture into bite-sized balls and roll them in the coconut. Makes 24 balls, depending on size.

Put them in the fridge for 15 minutes to set before serving. Store in an airtight container.
